Bridget B's of Watton-at-Stone
in Hertfordshire make some
attractive looking sausages
for sure...
We bought at pack of
traditional pork from
Pearce's, our firm favourite
farm shop on the A10 near
Braughing, although Bridget
B's do sell from their
onsite farm butchery at
Sacombe Hill Farm, Watton-at-Stone,
Nr Hertford, SG14 3NL and
also Reg Newman's old shop
which they've taken on at 36
High Street, Watton-at-Stone.
90% pork meat is a bold
statement, but from the look
of them in the raw these are
a damn good looking banger!
Natural skins thankfully
because we've tried some not
so sausages lately from
other makers using those
collagen cases and we've not
been impressed at all.
Cooking up produced a lovely
aroma from the pan, the
skins worked well with no
splits and no residual oil.
Ok a slight eruption from an
end or two of the samples,
but as the sausages were
pre-cut (rather than still
in a string) we think these
may have been separated a
bit too close leaving the
skins a bit short at the
ends to allow for them to
tighten down as they are
cooked. Yes yes, a bit nit
picky but there you go!
Honest reviews.
With 90% pork, from
experience, we thought that
these sausages may have
cooked up a bit solid,
however the texture was a
chunky medium and retained
good succulence too. The
bite and chew were pleasing,
and the flavour just like a
traditional pork should be
in our books. A slight
tingle on the tongue
afterwards...perhaps that
was the celery salt listed
on the ingredients?
Although these sausages
stayed plump, with minimum
shrinkage, weight loss was a
touch more than we expected.
All in all a very good
traditional pork sausage and
at £7.30 / kg perhaps fair
value too.
Would we buy again?
Definitely...but we'll try
some of Bridget B's other
flavours first perhaps.
