Farm2Table (Hallingbury, Essex) - Pannington Breakfast Pork

We called in to Farm2Table just before Christmas to check out the produce and were completely surprised to find "Pannington" sausages available in the retail display...

The conversation with the butcher who served us went a bit like this:

ME: "Hmm? Pannington sausages?"
BUTCHER: "Yes we make them here."
ME: "The only other place we've seen Pannington sausages was Jimmy's Farm."
BUTCHER: "Yes, we make them here."
ME: "What you make the same recipe here?"
BUTCHER: "Yes we make the sausages for Jimmy's Farm here"

Well that sorts a previous question we had when we visited Jimmy's Farm late last year and I asked if the sausages were made on site at the farm and the deli assistant said they were produced off site.

Looks like Jimmy's rare breed pork is sent down to the Farm2Table butchery, who process and provide back to Jimmy's Farm shop & deli accordingly. Well there's a thing...

The pork is from the Essex Pig Company rarebreed free range saddleback pigs as best as we can establish. However, if we are misinformed, I'm sure we'll get an email to put us right.

So Pannington Breakfast pork sausages then. They look pretty handsome in the raw even though they have visited the polar depths of our freezer for a few weeks. They're not labelled as such but we think they may be 95% pork. They also have wheat flour in them (so probably won't be gluten free) and although not specifically referenced as such they are in natural pork/hog casings (skins). Now here's a thing, the Pannington recipe since 1917 has 20% bacon in the mix we are told, along with white and black pepper! Yes please!

These sausages cooked up pretty well and browned nicely. The casing/skins could have done with a bit more at the twists in our opinion. We cut them carefully but we did get a few eruptions at the ends when cooking as the meaty innards expanded and the skins tightened. Not a show stopper we know but there you go. No splits though which was good, and none of that pale ooze either thankfully.

Texture was a good medium retaining a good succulence. They cut well without tearing. The bite and chew was very good but a touch salty which we put down to the added bacon. This wasn't OTT but just a bit more than we expected.

Quite a large sausage for a breakfast one, but hey, what do we know?

Eaten cold, not bad, but still a bit salty. The botton line: would we buy again?  Probably yes...!
