Foxholes (Hertford) - Pork Chipolatas

We've been sampling quite a few chipolatas recently as they do really nice on the barbeque for the grown ups and their kids alike!

Foxholes Farm is on the outskirts of Hertford, just off the A414 / A10 and their butchery produces sausages from the farms own free range saddleback pigs!
A visit to the farm shop will reveal all sorts of food goodies and would be well worth a visit....

80% pork in natural skins. The skins are quite fine as we've seen before but the result was good. They cooked up well, nicely browned and produced what we call the "snappy" bite you get with quality chipolatas. Texture-wise fairly close but not too firm. Just enough seasoning, although we thought they could benefit with a tad more. Only a touch though.

Minimum shrinkage and weight loss plus we'd say good value.

Eaten cold later...pretty good!

Would we buy again...certainly!.

Here's the sample details:
130x18mm before cooking, 125x18mm after.
39g before cooking, 35g after.
That's a shrinkage of 4% & weight loss of approx 10%.
8 in a 314g tray £3.33 (£10.60/kg).
